Lentil Stew Recipe

Ingredients:
1 cup dried green or brown lentils, rinsed
4 cups vegetable broth
1 onion, diced
2 carrots, chopped
2 celery stalks, chopped
2 garlic cloves, minced
1 can diced tomatoes
1 teaspoon dried thyme
1 teaspoon smoked paprika
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
In a large pot, sauté the onion, carrots, and celery in olive oil until softened.
Add the minced garlic and cook for another minute until fragrant.
Pour in the vegetable broth and add the lentils, diced tomatoes, thyme, and smoked paprika.
Bring the mixture to a boil, then reduce the heat and let it simmer for about 25-30 minutes, or until the lentils are tender.
Season with salt and pepper to taste, and garnish with fresh parsley before serving.
