Potatoes can be fast started mid winter provided you can keep them indoors for a while. I'm planting 3 dozen potatoes mid winter in yogurt pots. I could have planted them directly into buckets but there's no way I could accommodate 36 buckets in my garage. No water no problem, they've no roots. No daylight no problem they've no shoots. No room for 36 buckets, no problem use yogurt pots. When the shoots break the soil surface its a good bet they have a few roots. Time for a little drink and a relocation to get some daylight. When the potato starts to look like a small potato plant that's exactly what it is, its time to move it up into a bucket to grow on, to maturity.
