Stuffed manicotti is one of my favorite super cheesy and rich Italian dishes, and today we're whipping up a batch. But to kick it up a notch, I'm making Italian sausage from scratch using fresh-ground venison meat, and mixing that into the creamy, cheesy ricotta filling - along with some fresh spinach.
