Texas Sheet Cake Cookies

To make the cookies:

1/2 cup milk chocolate chips
1 1/2 cups all purpose flour
1/4 cup unsweetened cocoa
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 stick softened butter (not margarine)
1/3 cup sugar
1/3 cup packed brown sugar
1 egg at room temperature
1 teaspoon vanilla
1/3 cup buttermilk, at room temperature
3/4 cup chopped pecans


Preheat oven to 350°.

Sift together the dry ingredients, except for the sugars. Set aside.

Melt the chocolate chips in a microwave and allow to cool. Cream the butter and sugars until they are fluffy. Add the egg and vanilla and the melted, cooled chocolate and blend well. Add buttermilk and the dry ingredients, alternating these two until mixed. Add pecans.

Place by scoops on a prepared cookie sheet lined with parchment paper or a mat.

Bake in a preheated 350° oven for 8 to 10 minutes.

Allow cookies to cool thoroughly before frosting. 

To make the frosting:

6 tablespoons butter, melted
1/4 cup milk
2 tablespoons unsweetened cocoa
1 teaspoon vanilla
2 cups powdered sugar
Optional: finely chopped pecans for garnish

Sift the dry ingredients together.

Melt the butter and let cool.

Add the milk and vanilla to the butter. Gradually add the liquid to the dry ingredients until the frosting consistency is achieved. If desired, sprinkle with finely chopped pecans for a garnish.
