Ingredients:
• Large Shrimp – 1 Lb (450 Gms)
• Salt – 1 tsp, Red Chili Powder – ¾ tsp and Turmeric Powder – ¼ tsp to marinate shrimp
• Desiccated Coconut – 1/3rd Cup
• Poppy Seeds – 2 tsp
• Coriander Seeds – 3 tsp
• Cloves – 3
• Cardamom – 3
• Cinnamon Stick – 1 inch
• Oil – 3 tbsp
• Ginger Garlic Paste – 1 tbsp
• Green Chilis (slit into halves) – 3
• Salt – 1 tsp (or to taste)
• Red Chili Powder – 1 tsp
• Turmeric Powder – ¼ tsp
• Medium Onion (finely chopped) – 1
• Chopped Coriander Leaves – 2 tbsp
• Chopped Mint Leaves – 2 tbsp
• Yogurt – 1 Cup

Steps:
1. Mix shrimp, salt, red chili powder and turmeric powder, and marinate it for 15 minutes.
2. Dry roast poppy seeds, coriander seeds, cloves, cardamom, and cinnamon, and grind it into a fine paste by adding water as needed.
3. Add oil to the pan and sauté shrimp for a couple minutes and remove it to a separate bowl. Do not overcook the shrimp.
4. Add onion & green chilis to the same pan in the same oil and cook until onions are soft and translucent.
5. Add ginger garlic paste and the masala paste made from coconut and spices.
6. Add salt, red chili powder and turmeric powder to the pan and mix it all.
7. Add sautéed shrimp along with half a cup of water and cook it for about 5 to 7 minutes on medium heat.
8. Once the oil starts to ooze, add yogurt, and mix it well until it is combined well into the gravy.
9. Continue to cook on medium heat for additional 5 more minutes.
10. Add chopped coriander leaves & mint leaves and give it one last mix.
11. Aromatic Shrimp Khurma is ready, and it goes excellent with rice, roti or naan. Enjoy!
