high protein French toast casserole ingredients:
10 slices cinnamon raisin bread – I like Pepperidge farm
8 scoops vanilla (or birthday cake) whey protein powder – I use optimum nutrition
16 oz egg whites
16 oz unsweetened almond milk
4 teaspoons cinnamon
2 teaspoons vanilla extract
2 teaspoons almond extract (optional)
½ teaspoon baking powder
Chop bread into 1-inch cubes. In separate bowl, whisk other ingredients together. Spray baking dish/pan with nonstick spray. I use a glass 10”x15” baking dish but you can also use a regular nonstick baking pan. Put bread cubes into pan and pour mixture over. Make sure all the bread gets soaked up with mixture. You could put in fridge to further soak – like if you wanted to prepare the night before and bake in the morning. Otherwise, you can bake right away. Bake for 40 minutes at 350 degrees. Makes 8 servings.
