Ingredients:
• 1 ½ cups raw cashews
• 3 cloves garlic, minced
• 1 small onion, small dice
• 4 cups spinach
• 1 ½ cups non-dairy milk-unsweetened
• 1-2 Tbsp. lemon juice
• ¼ cup nutritional yeast
• ¼ cup vegan cream cheese
• 1 tsp salt
• ¼ tsp garlic powder
• ¼ tsp onion powder
• 2-14 ounce artichokes, drained, rinsed and chopped
Instructions:
1. Preheat oven to 425.
2. Soak cashews in boiling water for 5 minutes. Drain.
3. Sauté onion and garlic until onion is translucent. Add spinach and cook until wilted.
4. Using high speed blender add cashews, milk, nutritional yeast, cream cheese, lemon juice salt and spices. Blend until smooth.
5. Now add cooked onions and garlic, spinach and artichokes. Pulse a couple of times. Make sure to leave some texture!
6. Transfer to baking dish and bake for 20 minutes.
7. You can turn on a low broil for a few minutes to crisp up the top.
