Buckwheat is a great mid-Summer cover crop for garden zones 5 to 8. This video covers the experiment we ran growing buckwheat as a cover crop in our vegetable garden. It only took 35 days to get an amazing bed full of buckwheat that we have now turned into the soil to add back tons of nutrients. Buckwheat is great for heavy soils and can help free up phosphorus for other plants to use later.
