Join me for a great lunch idea. Let’s make a chickpea salad that has absolutely no oil in it! Can be served on bread, bagels, lettuce wraps or a big heap in a wonderful salad.

Cashew Sour Cream

Ingredients:

1 cup cashews
1 T fresh lemon juice
1/2 to 3/4 C water, or as needed
1-1/2 T Apple Cider Vinegar
1/4 teaspoon sea salt, or to taste

Tuna-less Chickpea Salad

Ingredients:

3 cups cooked chickpeas (or 28-oz. can)
2-3 T red onion, minced or chopped
2 to 3 celery stalks, chopped
2 to 3 pickles, chopped
2 T nori seaweed flakes
1/2 teaspoon freshly ground pepper
1/2 C cashew sour cream
sea salt to taste
