Mr. Kuespert's 7th grade students learn about how more than 2 billion people around the world consume insects as part of their regular diet. To demonstrate, the students were provided samples of eXo Bars, which are made from cricket flour, a powerful source of protein. Will the other 5 billion people begin consuming more insect protein as traditional western sources become more expensive and harder to produce?
