This leftover Ham and Orzo casserole is a delicious way of using leftover holiday ham, but it can also be prepared anytime of the year. I love the texture of the Orzo pasta because it’s a nice change from the usual rice and bigger pastas. You can replace the ham or other ingredients if you wish too, this dish is easy and quick and super delicious. This can be made into a one pot dish, but I like to cook my Orzo first then rinse it because it’s lighter and less mushy, and I don’t like mushy. You can serve it alone or with a nice salad and your favorite crusty bread. I hope you give it a try. ❤️

INGREDIENTS—————————
350° 25-30 minutes
1 1/2 C. diced ham
8 oz. uncooked ORZO (1 cup)
1/4 C. Chopped yellow onion
1/4 C. Chopped green onions
1 C. Chopped Celery
2 1/2 Tbsp Olive Oil
1 1/2 Tbsp All Purpose Flour
2 C. Can Diced tomatoes (drained)🍅
1/2 C. Chicken broth
1/2 tsp dried oregano
1/4 tsp onion powder
1/4 tsp garlic powder
2 or 3oz. sliced black Olives (drained) or more if you like
2 1/2 C. Freshly grated Monterey Jack cheese
Salt to your liking
Pepper to your liking
Cayenne pepper (optional)
