CHICKEN ARROZ CALDO is a popular Filipino rice soup which has rich flavors of chicken and rice seasoned with ginger, garlic, onion, pepper and fish sauce. it can be added with hard boiled eggs. Topped with scalliion and roasted garlic served with lime or lemon. This soup is oozing with flavors and great during rainy and cold season. Traditionally, a kasubha (safflower) is added to complete the flavor and give the yellow color but if it is not available substitute it with paprika or tumeric. So quick and easy to make. Here is how to make FILIPINO CHICKEN ARROZ CALDO:
FILIPINO CHICKEN ARROZ CALDO RECIPE :

Ingredients:
1 1/2 cup rice, washed
1 lb chicken thighs or wings
1 head garlic, chopped
1 large onion, chopped
1 thumb ginger, julienned
8 cups water
3 tbsp fish sauce
1/2 tsp pepper, divided
1/2 tsp salt
1/2 tsp paprika
2 tbsp oil
hardboiled eggs
scallions

Directions:
1. In a pan, heat oil over medium heat. Roast garlic until golden brown. Remove from the pan and set aside.
2. In a pot, heat oil over medium high heat. Add chicken season with salt, pepper and paprika. Stir fry until all chicken are coated with seasonng. Sear chicken until browned on all sides. Remove from the pan and set aside.
3. In the same pot, add ginger. Cook for 30 seconds. Add onion, cook until translucent. Add garlic cook until lightly browned.
4. Add back the chicken. Stir fry until well combined.
5. Add the rice, stir to combined.
6. Add water and 2 tbsp fish sauce. Stir to combine.
7. Cover with lid and let it simmer for 30 minutes or until rice is fully cooked and broth thickens. Stir occasionally.
8. Once cooked, season with pepper and 1 tbsp fish sauce.
9. Add scallions and hard boiled eggs.
10. Garnish with roasted garlic and scallions.
