This is guaranteed to be one of the tastiest burgers you’ve ever had. A spicy jerk oyster mushroom burger, complemented with sweet plantain, mango and purple cabbage slaw. A whole wave of flavours.
Olive oil for frying
250g oyster mushrooms
Vegan brioche buns
Fried ripe plantain
Jerk marinade:
1 onion, chopped
6 cloves garlic, minced
3 spring onions, sliced
4 sprigs of thyme
1 ½ tbsp pimento seeds
1 scotch bonnet, deseeded
1 tbsp apple cider vinegar
2 tbsp brown sugar
1 tbsp lemon juice
1 tsp browning
2 inches ginger
1 tbsp cinnamon
1 tbsp black pepper
1 tsp salt
Mango slaw:
1 cup purple cabbage
½ mango
⅓ cup coriander
2 tbsp olive oil
¼ cup chillies
⅓ cup onions
1 tbsp lime juice
1 orange, zest
pinch of salt
