Zoe’s Nut Crusted Salmon with Walnut & Roast Capsicum Puree

Zoe Bingley-Pullin whips up her perfect recipe for salmon. It's got crunch, nutritious and high in Omega-3 fatty acids and a whole lot of flavour.

You can find the recipe below:

Serves: 4-6, Prep: 10min, Cook: 15-20min

Ingredients:
4 x 150g salmon fillets, skin off
1 cup mixed nuts, coarsely ground
1-2 tbsp. olive oil
salt and pepper

Puree:
½ cup walnuts
1 garlic clove, crushed
2 red capsicums
1 tbsp. lemon juice
salt and pepper to taste
½ tsp. smoked paprika
½ tsp. cumin, ground
1-2 tsp. pomegranate molasses

Method:
To make the puree, chargrill capsicum over an open flame or place in the oven until blackened, remove skin. In a food processor, combine all of the ingredients, season to taste.

For the salmon, mix nuts with salt and pepper and lay on a flat plate. Drizzle salmon with oil and then dip into the nut mixture, covering well. Place fish in the oven at 180C until cooked to liking or heat oil over medium-high heat and sear in the pan and then finish off in the oven.

Serve crusted salmon with walnut capsicum puree and simple green salad.
