I was still unsure on how to do a wood inlay so instead of using a cutting board made from scratch I used a inexpensive one from @hobbylobby. The letters were made out of end grain mahogany. For the clearing path I used a 1/8 upcut end mill and the final pass a 1/16 tbn. Then I finished it with mineral oil, enjoy!
