½ cup Natural chunky peanut butter
½ cup Rolled oats
2 teaspoons Honey
1/8 teaspoon Salt
½ teaspoon Coconut oil
2 ounces Dark chocolate 70-85% cacao
Optional garnish: cocoa powder, coconut, chopped nuts
Blend ingredients 1-4 in blender or food processor. Roll peanut butter mixture into 1-inch balls and refrigerate. Melt coconut oil and chocolate in microwave in increments of 30 seconds until melted. Roll peanut butter balls in chocolate. Refrigerate until ready to serve.
