INGREDIENTS FOR CHILE RELLENOS

Poblano Peppers (1 per person or 2 for big eaters)

Cooked Meat or Rice blend of your choice

Jalapeño Havarti or Pepper Jack Cheese cut into blocks

Enchilada Sauce of your choice RED or GREEN

Place poblanos over open flame until charred on all sides. (You can broil them but I prefer them blackened over open flame. You can do this on a grill too!)

Place blackened poblanos into ziplock bag and seal. Allow to steam.

Scrape them off and remove seeds.

Fill with meat or filling of rice or just cheese!

Place cheese block into poblano pepper

Pour your favorite enchilada sauce over and into poblanos

Sprinkle more cheese.

Bake 375 to 400 degrees until hot and bubbly! (20-30 minutes)

Serve as a main course or as a side dish

I serve with Spanish Rice and Refried Beans
