Maamoul cookies are famous Arabic cookies that is made in Eid (Holiday). Maamoul is made with semolina, plain flour or a combination. It is mostly filled with dates, but can be filled with nuts too. Ingredients:

For the Maamoul cookies dough:

1 1/2 cup fine semolina
1/3 cup ghee or melted butter
1/4 cup vegetable oil
3/4 cup flour
1/2 cup powdered sugar
pinch of salt
1 tsp vanilla extract
1/3 cup warm milk
1/2 tsp white sugar
1/2 tsp instant dry yeast

For the Walnut Filling :
1 cup walnut
1/2 tsp cinnamon
1/2 tbsp white sugar
1/4 tbsp water

For date filling:
13oz/370g grounded dates
1/2 tsp cardamom
few drops of olive oil
