材料:
中筋粉 300g
日本紫薯粉 15g
耐高糖酵母 3.5g
鹽 2g
糖 25g
北海道牛奶 160g
液體菜油 7g

🌟朱sir分享搓饅頭秘訣:
成日都有同學話唔光滑,
1. 有否搓夠光滑?
2. 部分麵粉的吸水量較高,要再加水有冇加?
3. 有否蒸o個陣疏氣?
如果做足以上三點都唔靚,
咁極有可能係發酵不足的關係!
發酵後可以摸下饅頭重量有冇變輕, 手摸饅頭底部是不是棉花糖一樣的手感,
去判斷發酵是否完成.
對我來講蒸饅頭用咩火力唔重要,燜唔燜都唔重要,
我以前用公業爐都用大火,都可以直接掀蓋,
我教你地等5分鐘先開蓋,係想你地更穩定做到靚o既饅頭~
所以發酵得好,乜野問題都冇;發酵唔好,任何問題都有機會產生...

Sugar 25g
Milk 160g
Vegetable oil 7g
