INGREDIENTS:
Fish - make sure scales are still on
Coarse salt usually 1:1 ratio weight of the fish and salt
1 egg white beaten for every kg of salt
Parsley
Lemon
Aromatic herbs: Sage, rosemary, bay leaves, thyme etc...whatever you like
Serve with extra virgin olive oil...from Passo della Palomba ideally!
