This delicious recipe is a quick and easy side dish to accompany any meal! I've made it quite frequently for my family for over 30 years now. The ingredients are very easy to substitute. If you don't have fresh onion or garlic...use ground. You can use butter instead of olive oil and beef or vegetable bouillon instead of chicken. You can make it with white or brown rice and use your favourite frozen vegetables. So change it up to suit your preferences! Ingredients:
2 tablespoons Olive Oil (or butter)
1 clove Garlic, minced
1 Onion, chopped
1 cup Long Grain Rice (White or Brown)
2 cups Water
2 sachets of Oxo Chicken Bouillon (or 2 cubes - I use only 1)
1 cup Frozen Mixed Vegetables
1/4 teaspoon pepper

In large saucepan, add olive oil (or melt butter). Saute garlic and onion until tender. Add remaining ingredients. Bring to a boil; cover and simmer over medium heat until rice is tender and liquid is absorbed (20-25 minutes). Garnish as desired. (Makes 4 to 6 servings)
