I am in the amazing city of Herat, Afghanistan, eagerly anticipating my experience of tasting the renowned Moling Qabeli Palaw and authentic Goshte Land at the local butcher shops. The excitement is real!
The culinary delight of Moling Qabeli Palaw at Shinwari Restaurant in Herat, where the art of cooking reaches new heights. The flavorful journey begins with Moling, a large pot filled with meat, rice, and an array of spices. As sesame oil adds a touch of luxury, raisins, carrots, and split peas enhance the dish's visual and gastronomic appeal. The star of the show is the Moling itself, boasting bone marrow with a jelly-like texture and succulent meat. Every bite is an explosion of exquisite flavors and textures, creating an unparalleled dining experience. Shinwari's Moling Qabeli Palaw is not just a meal; it's a masterpiece that excites the taste buds and leaves a lasting impression. Truly the best dish ever

Next on we went to see the famous Goshte Land, prominently displayed in various butcher shops across the city. The exquisite Grand Mosque of Herat adds to the city's charm, creating a truly spectacular atmosphere for locals and visitors alike. Among the delicacies offered, the popular Kichiri Goshte Land stands out as a must-try dish.
The process of making Goshte Land is meticulous and time-consuming, taking approximately two months to prepare. It begins with the slaughtering of lambs, where the meat is cut into pieces then salted and meticulously dried under the sun for 10 days and in the shade for 7 days, then hung on wood, and left to dry further before being available for purchase at the butcher shops.
