GLideN64 is a video plug in that works for N64 Emulators.
The next release will be bringing true widescreen support to Diddy Kong Racing (N64), along with a whole load of other improvements.

Jabo's Direct3D plugin, which comes with Project64, has this option but it does not work for this game.
