Ingredients (2 portions):
- arugula
- 10 cherry tomatoes, quartered
- crumbled feta cheese
- chopped pecans (a handful or about 20 halves)
- 4 small golden beets, roasted or boiled

Dressing:
- 6 tbsp extra virgin olive oil
- ½ lemon juice
- 1 clove garlic, minced
- salt and pepper to taste
Instructions:
1. Prepare the dressing: whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
2. Prep the ingredients: wash the arugula, quarter the cherry tomatoes, crumble the feta, toast the pecans, and roast/boil, peel, and slice the golden beet.
3. Assemble the salad: combine arugula, cherry tomatoes, feta, pecans, and golden beets.
4. Drizzle the dressing over the salad.

Serve and enjoy!
