So I have de-restricted my Ribble e-bike using the speedfun ghost adapter , simply plug in and ride that simple.
This is just a quick video of the whole process , just don’t be expecting speeds in excess of 25mph it’s a 250 w motor remember, also this will bring down the range of your battery too.

Disclaimer - this was done on my bike without any issues but I’m not responsible if you try it and your bike stops working.
