How To Make One Pot Chicken Rogan Josh:

Serves 4
For the Rogan Josh
1 tbs Vegetable oil
800g Chicken thigh fillets, diced
1 large onion, chopped
1 tbs Ginger & Garlic paste
1 tsp Ground cinnamon
½ tsp Ground green cardamom powder (seeds bashed into powder)
2 tsp Chilli powder
1 tbs Ground Cumin
1 tbs Ground Coriander
1 tsp Turmeric powder
1 tbs Garam Masala
400g Chopped Tomatoes (1 tin) mi
2tbs Tomato Puree
Salt
Coriander leaves to garnish
To Make Chicken Rogan Josh
STEP 1
Using a large lidded frying pan/skillet heat over the oil over a high heat and then turn down the heat to medium, add the onions and cook until softened and brown at the edges.
STEP 2
Pop in the ginger and garlic paste, stir through the onions and then add all the spices and coating everything with everything. Now dash in 200ml water to create a thick paste.
STEP 3
Pour in the tinned tomatoes and tomato puree and cook for 5 minutes. Now add in the chicken and mix thoroughly, season with salt. Cover and cook for 15-20 minutes until the chicken is cooked and the sauce is thick and luscious.
Serve with rice, a blob of yoghurt and flutter over the coriander.
