Brisket to Corned Beef

-Buy a brisket

-Because I am corning the whole brisket I don’t care about the Tri Tip. Trim off any oxidized parts (brown parts) and any fat that doesn’t look good.

-Cut it in half

-Put them in sealable bags or a container where they can be submerged.
Upu will mix the cure and add it to these bags. If you don’t have sealable bags get a container with a lid where you can submerge it.

-Mix up the cure below

1 Gallon Water
1 Cup Salt
1 T Curing Salt
Bay leaves
Coriander seeds
Mustard Seeds
Allspice Berrys
1 T Ginger Ground
Cinnamon sticks broken up
Whole Peppercorns
Whole Cloves
Whole Chilies
Juniper Berries
3/4 cups brown sugar
Garlic Cloves

Whisk together and drop in with brisket.

Soak for a week or more.

I am corning mine a month before St. Patrick’s Day and keeping them in the fridge until then.

Take out, rinse well and cook 👍🏼
