Welcome to Bonita's Kitchen! Today we will be making BACON CHEESEBURGER MEATLOAF. This meatloaf is made with a few simple ingredient's and the recipe is posted below!!! Comfort food at it's best!!

Ingredients:
2 pounds lean ground beef 1 onion, grated
1 cup stale bread crumbs 2 eggs, large
1 tsp pepper 6 strips of bacon
1½ cups shredded cheese ½ tsp ground rosemary
1 tsp onion powder

Method:
In a bowl add lean ground beef, stale bread crumbs, pepper, grated onion, onion powder
and ground rosemary.
Mix by hand with a wooden spoon or pulse your mixer not to over mix for a few minutes.

You will need a meatloaf pan or pan with a piece of parchment paper to line the bottom and up the side.

Add ¾ meat mixture to the pan, then make a well for the filling…when pressing the meat in the pan go up the sides. Fill the centre with one cup of shredded cheese. Top with the remainder of the meat mixture, pressing sides together to seal edges.

Layer bacon strips on top of meatloaf.
Preheat your oven to 350ºF and bake for 50 minutes. Remove meatloaf from oven layer the remainder of cheese over top and return the meatloaf to the oven for 10 minutes or 145ºf on your cooking thermometer.
When ready remove from oven after the 10 minutes and if you got a meatloaf pan remove from the sides or if you are using parchment paper left from the side pieces.

Put on a cutting board, let rest for 10 minutes then cut in slices.

Serve with a salad, or air fried potatoes.

Bonita’s Tip:
Use your favourite cheese for the filling and top.
Cheese filling is very HOT and will ooze from the centre when first sliced.
Use less fat bacon to have less oil.
