材料清單:
蘋果派 (1個7吋全派,或 6-8個手拿派)

7吋派盤 (用金屬製,底面有開洞的不沾烤盤效果會更好)

[蘋果餡]:
2大顆 蘋果, 切小丁
2小匙 肉桂粉 (喜歡的人可以多加)
1/3杯 紅糖 (取決於蘋果的甜度)
半杯 太白粉水(半杯水+1大匙太白粉)

*放冷藏一天

[派皮]:
2杯 低筋麵粉(或中筋麵粉)
1大匙 白糖
1小匙 鹽
半杯 無鹽奶油 (冰的,不需解凍)

*放冷凍庫直到奶油變硬再繼續下個步驟

110ml 冰水



**成麵糰後放冰箱冷藏一天

[蛋液]:
1顆 蛋黃
1大匙 牛奶




等待烤箱預熱時請放冰箱
派皮製作過程盡量別花太多時間。奶油與麵皮溶解在一起皮就不酥了

400F/205C烤30-40分鐘
各家烤箱不同, 時間請自行斟酌

Apple Pie
(A 7" whole pie or 6-8 pieces turnovers)

7" pie pan (use non-stick metal pan for better result)

[Apple filling]:
2 large apples, chopped
2 tsp cinnamon
1/3 cup of brown sugar (depends on the sweetness of apple)
0.5 cup of corn starch mixture (half cup of water + 1 tbsp corn starch)

*chill in fridge overnight

[Pie dough]:
2 cups of cake flour (or all purpose)
1 tbsp white sugar
1 tsp salt
0.5 cup of cold unsalted butter
*Freeze until the butter become hard, then continuous for next step.

110ml ice cold water
**Chill the dough in fridge overnight

[Egg wash]:
1 egg yolk
1 tbsp milk

**While waiting for oven to preheat, refrigerate the pie.
***Keep it short while making/roll out the pie dough.
If butter melts and fully combined with flour, you'll lost the flaky & crispy texture.

Bake at 400F/205C for 30-40 minutes
**Time may very depends on the type of oven you have.
