▌材料 Ingredients

简易英式司康 Easy British Scones:

200g 低筋面粉 Cake flour
8g 泡打粉 Baking powder
50g 无盐黄油 Unsalted butter
40g 细砂糖 Granulated sugar
1/2tsp-3g 盐 Salt
35g 蛋液 Egg liquid
60g 牛奶 Milk
适量 a little 葡萄干 Raisin
直径6cm切割器 6 cm cutter


▌步骤 Instructions

1. 低筋面粉和泡打粉过筛
2. 加入黄油,和面粉搓揉成颗粒状,黄油会包裹面粉分子,之后加入液体,面粉就不会形成面筋影响口感
3. 加入糖和盐,搅拌均匀
4. 加入蛋液和牛奶,使所有材料成团即可
5. 冷藏至少1.5小时
6. 面团稍微擀薄,铺上适量葡萄干,折叠4-6次,司康的口感才会层次分明酥松
7. 擀成2cm左右的厚度,分割成6份
8. 烤箱预热180°C/ 356°F,蛋糕入烤箱后转170℃,中层烤20mins
9. 出炉后放凉即可享用,搭配果酱更美味

1. Sift cake flour and baking powder
2. Add butter and knead the flour into granules. The butter will wrap the flour molecules. After adding the liquid, the flour will not form gluten and affect the taste.
3. Add sugar and salt and mix well
4. Add egg and milk to make all ingredients into a dough
5. Refrigerate for at least 1.5 hours
6. Roll out the dough slightly, spread a proper amount of raisins, and fold it 4-6 times, to make the texture of the scones better
7. Roll out to a thickness of about 2cm and divide it into 6 parts
8. Preheat the oven to 180°C/ 356°F, turn the cake into the oven and turn it to 170°C, bake the middle layer for 20mins
9. Let it cool after it is out of the oven, it is more delicious with jam


▌Tsp to Gram

1Tbsp 汤匙 = 15g
1Tsp 茶匙 = 5g
1/2Tsp 茶匙 = 2.5g
1/4Tsp 茶匙 = 1.25g


▌Egg size to Gram

AA = 70g and above
A = 65-70g
B = 60-65g
C = 55-60g
D = 55g and below
