It might not be the most glamorous menu, but I wanted to share my method for meal-prep that I use exclusively while living in a van. I have a limited amount of kitchen tools/appliances so it has taken me a while to find an efficient way of cooking while living on the road. When you live in a vehicle efficiency is key, so albeit a little repetitive and pretty basic, this is what works for me.
