Vanilla bean paste is a really important pantry staple in my house. This recipe first appeared in my calendar How To mIx which is also available to purchase as an eBook. It is important you get really good quality vanilla beans and I tend to use the madagascan vanilla beans in gourmet quality that I buy online. They are really fresh and squishy which tells me they are super fresh. This Thermomix recipe is so easy to prepare and if you find that you need more water, simply add it halfway through the recipe. Sometimes, depending on the type of sugar you used, you might need to add a little more.

R E C I P E

Ingredients

15 vanilla beans, cut in 1cm long strips
400g raw sugar20g glucose syrup200g water
1 pinch sea salt flakes

Method

Place the vanilla beans and sugar in the mixing bowl then blitz 1 Min. / Speed 10. Scrape down using spatula.
Add the glucose syrup, water and salt then cook 10 Min. / 100°C / Speed 2. Meanwhile, sterilise a jar and set aside.
Once cooked, pour the vanilla bean paste into the prepared jar and seal tight. Store in the fridge for up to 3 months.
