The Goan Prawns Curry (Goenchi Sungta Kodi in Konkani) is one of the best coconut-based curries one could ever try!
Pairing the unmistakable, lovely flavour of prawns (or shrimps) with the commonly used spices, tangy tamarind and sour Aambya Sol, has brought into existence a curry so aromatic and exploding with flavour, yet so appropriately balanced, it is indeed a culinary genius. Goan recipes are distinguished by their bright, show-stopping hues, which in turn bring satisfaction not only to one's belly but also to the eyes :) Honestly, it's rare to not spot vibrancy in our dishes— it's no wonder that Goans also have bright, cheerful behaviours!
