The first tart I made was a strawberry tart, so I have this weird nostalgia attached to it. Asides from that, it's also my favorite! I absolutely love fresh strawberries. If you have access to a farmers market, I highly recommend you buying your strawberries from there. I wasn't able to this time, but it makes a world of difference.

Jam
- I recommend buying strawberry jam from a grocery store! If you want to be ~adventurous~ you can try other jam flavors that you think would work with strawberries.
Pastry cream (enough for one 8 inch or 9 inch tart)
- 270g milk (1 cup + 2 tbsp.)
- 65g granulated sugar (1/3 cup)
- 25g cornstarch (2 tbsp + 2 tsp)
- 5 large egg yolks
55g unsalted room temperature butter (4 tbsp. or half a stick)
Apricot glaze
- 3 to 4 tablespoon of any kind of apricot jam. It's okay if it's mixed with another fruit! And a splash of water.
