First, I check into my new Saigon hotel, Silverland Yen, then hop on a motorbike in search of some Banh Xeo, only to find the restaurant where Anthony Bourdain ate was closed. Out of the tourist zone in unfamiliar parts of Ho Chi Minh City, I meet friendly locals who are kind and engaging in my most memorable night in Vietnam.
