Ingredients:
For the Chicken:
1kg whole chicken cut into small pieces
1 cup yoghurt
2tbsp biryani masala
2tsp coriander powder
1/2tsp turmeric powder
1tsp salt
1tbsp vegetable oil
1tbsp each freshly chopped mint and coriander or parsley leaves
For the rice
Boiling water
3cups basmati rice
4tbsp vegetable oil
3 pieces whole cinnamon
10pieces whole cardamon pods
10piesces whole cloves
1tsp whole cumin seeds
2 large onions
3tbsp unsalted melted butter or ghee
For the cucumber salad:
2 cucumbers
1 white onion or red
1/4cup apple cider vinegar
1tbsp honey
3/4tsp salt
1/2tsp black pepper
1tbsp freshly chopped parsley leaves
-Thinly slice cucumbers and onions. Place in a bowl and mix.
-For the dressing mix vinegar, honey, salt and pepper
-Add the dressing to the cucumber and onion and mix well.
-Add the chopped parsley leaves, mix well then rest in fridge for 10mins before serving.
