Hey friends! I hope you are entertained as I am over these meatloaf cupcakes! These are perfect for kids, April Fools, Festivus, parties, etc or you can skip the mashed potato "frosting" and use the basic premise for meal prep or portion control.

The recipe for a single batch (I made a double batch in the video) is:
1 pound meat - can be all ground beef or a mix
2 eggs
1 box stuffing mix
1/3 cup of ketchup
1 cup water
Your choice of seasoning (I used pepper, garlic, cayenne)

Mix well and bake at 375 until cooked through - the size you make them will determine your cook time. I cook a full 1lb meatloaf for 35 minutes. I cooked the cupcake sized portions in the video for approximately 20 minutes.
