The California Yellowtail, a true Southern California staple species. These fish are available year round to the lucky anglers who call SoCal home. These drag peeling jacks can be targeted along coastal pinnacles and kelp lines, our offshore and coastal islands, and everywhere in between on floating kelps or debris. While techniques vary across the board depending on where you choose to target them, one thing is for sure, these fish sit atop many anglers list as their favorite species to pursue.

The Yellowtail is also knows for its delicious firm white meat. Whether you choose to prepare them as sashimi or throw them on the grill and make fish tacos, there's really no way to go wrong. In this video, BD Outdoors Pro Contributor Ricky Fischel demonstrates how to process a small grade Yellowtail caught on an offshore kelp. He's using the @DexterOutdoors Dextreme filet knife – a great option for filleting those fish with thick skin or tough scales, as it allows you to keep your fillet edge sharp by providing a second serrated edge to cut through portions of the fish that would otherwise dull your knife. Take a look and let us know if you've ever put the Dextreme to the test on your catch.
