🍔 RECIPE & INGREDIENTS 🍔

Jerk Chicken:

10 bone in, skin on chicken thighs
2 tbsp pimento seeds
2 scotch bonnets
1 bunch of fresh thyme
2 limes, juiced
4 tbsp oil
2 tbsp sea salt
1/2 tsp browning
1 bunch of spring onions 
3 cloves of garlic
one thumb sized piece of ginger 
2 tbsp brown sugar

1) Using a sharp knife, score the chicken thighs and keep outside of the fridge for an hour.
2) Blend the remaining ingredients together using a food processor and cover the chicken with it.
3) Once the marinade has been fully mixed in, place skin side down over the hot coals and grill for around 15-20 minutes flipping regularly.

Lamb Chops:

2KG lamb front chops
1/2 jar mint sauce
1 bunch of rosemary 
1/2 bulb garlic 
2 tbsp oil
2 tbsp cumin seeds
2 tbsp salt

1) Strip the rosemary leaves off the stalk and finely chop them along with the garlic. Combine with the mint sauce, oil, cumin and salt.
2) Massage the marinade over the lamb chops and grill for around 4-5 minutes on each side.

Burgers:

500g beef mince
500g lamb mince
100g harissa paste
2 tbsp cumin seeds
1 tbsp coriander powder

1) Combine all the ingredients together in a bowl and using a very minimal amount of mixing, work the mixture together.
2) Shape the burgers into patties and grill for about 6-8 minutes on each side.

Barbecue set up:

1/2 bag of kindling wood
6 cotton wool balls
5kg bag of coal
large tray to fan with
(tissue for the tears!)

1) Arrange a small amount of wood in the centre of your barbecue in a hashtag like shape. Place cotton wool in and around it and light the wool.
2) Using a fan, increase the flow of wind to the fire so that the wood starts to burn. Begin adding a few more wood pieces around to build a larger fire.
3) Tip the coal on the side of the fire and using a pair of tongs, carefully place the coal around the fire so that each piece is exposed to the flame.
4) Fan the fire very quickly for around 10 minutes or until all of the coals have turned white and are glowing hot.
5) Use the tongs to break apart the mound of coal, piling a larger amount on one side of the barbecue and leaving a smaller amount on the other side to create higher and lower temperatures.
6) Place the grills on and begin cooking!
