In today's fast-paced life, having a nutritious meal ready in no time is a blessing. Join us as we share a simple and delicious one-pot meal recipe for those busy days: Millet Khichdi. Packed with wholesome ingredients and bursting with flavor, this khichdi is not only comforting but also incredibly nutritious.
Ingredients:
1 cup mixed millets (foxtail millet, barnyard millet, little millet)
1/2 cup yellow split moong dal
2 medium-sized carrots, diced
1 cup mixed vegetables (peas, beans, seasonal vegetables)
1/2 teaspoon turmeric powder
1 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1 tablespoon ghee or oil
1 teaspoon grated ginger
Salt to taste
Fresh coriander leaves for garnishing (optional)
Instructions:
Wash the mixed millets and yellow split moong dal together under running water thoroughly.
Heat ghee or oil in a large pot over medium heat. Add cumin seeds and mustard seeds. Allow them to splutter.
Add grated ginger and sauté for a minute. Then add the vegetables and washed millets along with yellow split moong dal. Stir well to coat with the aromatic mixture.
Add turmeric powder and salt to taste. Mix thoroughly.
Add 4 cups of warm water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the millets and lentils are cooked and the khichdi has a porridge-like consistency.
Once cooked, fluff the khichdi with a fork. Garnish with fresh coriander leaves if desired.
Serve hot with yogurt or a slice of lemon.
