A good friend refurbed and gifted me his old Oklahoma Joe’s ‘Chuckwagon’ offset smoker. This is a really high quality heavy gauge steel smoker. Offsets are also referred to as a stick burner because wood is the preferred fuel source, not charcoal.

We will cover how to smoke a brisket, focusing on a finishing technique that makes it extra juicy.
