Farmers’ markets are in full swing across Nebraska, hosting large and small produce farmers alike.

But do you know what it takes to prepare for each market?

Ryan Pekarek of Pekarek’s Produce near Dwight, Nebraska, describes their process for preparing for farmers’ markets.

He said first, they pick produce seven days a week. The produce is washed and sorted by size and quality. Then, the produce is stored in a cooler at 35 degrees until it’s time to load pallets and hit the road.

For the Haymarket Farmers’ Market in Lincoln on Saturdays, Pekarek loads the truck at 4:30 am, heads to Lincoln at 5 am and gets set up by 6:30 am.

A similar process is repeated for the Sunday Farmers' Market at College View.

Pekarek said one of the biggest misconceptions of farmers’ markets is that all of the produce is picked just hours before the market begins, which he said would be nearly impossible.
