We Made TikTok Corn Ribs And It Was Crazy! Glen And Friends Cooking
Everyone seems to be crediting this Air Fryer Corn Ribs recipe to the @spicednice TikTok account. According to the clip, they drew inspiration from elote, Grilled Mexican Street Corn. But, just a little research reveals that this recipe / method of cooking corn as a rib goes back a few (5 or 6) years. There are also a couple of Youtube videos that are at least two years old... So TikTok was actually pretty late to the party... Nothing is new, almost every recipe has been done, and I'm always suspect of someone who claims they invented a 'new' recipe.

Ingredients:
60 mL (4 Tbsp) olive oil
5 mL (1 tsp) lemon pepper
2 mL (½ tsp) garlic powder
2 mL (½ tsp) chili powder
2 mL (½ tsp) paprika
1 mL (¼ tsp) black pepper
A pinch of salt
4 cobs of corn

Method:
Preheat fan oven to 425ºF - full fan
Mix the olive oil and spices together in a large bowl.
Slice the corn lengthways into 4 'ribs'.
Toss the ribs in the seasoning to fully coat.
Arrange on a baking sheet and convection roast for 10-15 minutes.
Alternately; place the ribs in the air fryer and cook at 400ºF for 10 minutes.


If desired this is a great sauce to spread on the ribs while eating:
125 mL (½ cup) mayonaise
10 mL (2 tsp) chopped chipotle peppers in adobo sauce
30 mL (2 Tbsp) lime juice
Salt, to taste
Mix all together into a sauce.
