这一期要和大家分享的这一道青咖喱我觉得很适合我们本地人的口味 不用任何咖喱粉 靠的都是新鲜的香料煮出来的青酱 配合鸡胸肉和茄子 希望九层塔味道的朋友们那就更不用说了 整到菜充满香气 非常开胃 希望大家会喜欢

Ingredients (Diana Aw)
1. Chicken breast 300-400g
2. Egg plant half piece, remove part of the skin and cut long strips
3. Basil leaves
4. Water 1 bowl
5. Carnation milk little
Green curry sauce ingredients (blend)
1. Green chilli 5-6pcs, remove seeds and cut smaller
2. Green chilli padi 3-4pcs
3. Shallot 5pcs, cut half
4. Garlic 3pcs, cut half
5. Ginger small piece, sliced
6. White peppercorns 1tsp
7. Coriander seeds 1tsp
8. Little water
Seasoning
1. Salt 1/2tsp
2. Sugar 1/2tsp
3. Chicken powder 1tsp
Method
1. Fry the egg plants till lightly brown. Set aside
2. Stir fry the green curry sauce under low heat till oil extracted and aromatic
3. Add in chicken and stir fry under medium heat.
4. Add in water and bring to boil. Turn to low heat and add salt, sugar and chicken powder. Simmer for 10min.
5. Add in egg plant and mix well.
6. Add in basil leaves and mix well
7. Add in carnation milk and mix well
8. Serve and enjoy! 💕
