Chickpea Smash Lettuce Boats

Recipe for Chickpea Smash:

Ingredients:

1 can of chickpeas

3 tbsp. tahini

1 tbsp. pure maple syrup

1 tbsp. brown mustard

1/4 cup relish (or chopped pickles)

1/4 cup chopped green onion (scallions)

1/4 cup chopped celery

1/2 tsp. salt, or to taste (optional)

1/8 tsp. ground pepper, or to taste optional: 1 tbsp. chopped jalapeno 1 tsp. sriracha

Instructions:

BASIC CHICKPEA SANDWICH SMASH MIX: Grind Chickpeas in a mini processor to a coarse mix (no whole beans). Add in all the other ingredients for sandwich smash and mash until you achieve a cohesive sandwich spread. Serve on bread, in lettuce boats or as a dip for carrots, celery and other veggies. Add tomatoes, onions and lettuces to your sammie.
